We’ve a few bananas that aren’t looking great for eating, but will make for fab muffins. I also have a couple of now-or-never eggs to use up so why not take the opportunity to save a bit of waste and make some muffins instead? They don’t take long to put together either, so extra bonus is I can be eating muffins for lunch.
EDIT: I took what was left of these on a visit with family. Our youngest nephew said they were, “pretty good, actually”. Coming from a teenager, that’s the best I could have hoped for! Although I wonder if I should have taken it as an insult that he seemed surprised? Ha!
Ingredients
- 100g Butter
- 2 VERY ripe bananas
- 100ml Milk
- 80g Caster Sugar
- 2 Eggs
- 200g Self-Raising Flour
- 1Teaspoon Baking Powder
- 50g Chocolate Chips
- 1Teaspoon Vanilla Extract
Method
- Melt butter (either in microwave or on the hob in a pan). Leave to cool.
- Once cool add vanilla.
- Peel and mash the bananas.
- Add the milk, eggs, sugar and butter together in a bowl.
- Whisk together.
- Separately mix the flour, baking powder and chocolate together.
- Add all ingredients to the larger bowl.
- Fold together carefully (don’t overmix)
- Divide between 12 cake cases.
- Cook at 190C for 25 minutes.
- Leave in the tray for 5 minutes.
- Then move to a cooling rack to cool completely.
