Time to get your geek on! This was a last minute bake as I’ve been a little short on time this week. However, they came out great. The only thing I would change about this one, is the icing. I wish I’d have just used icing sugar and water, but hey ho! They taste great, and look fabulous, even if I do say so myself! Happy Star Wars Day!!!!!
Ingredients for Cupcakes
- 175g Butter
- 175g caster sugar
- 1 tsp vanilla extract
- 3 eggs
- 175g self-raising flour
- ½ tsp baking powder
Ingredients for the Icing
- 250g icing sugar, sifted
- 125g Butter
- 1/2 Teaspoon vanilla extract
For the Mallow Heads
- 12 White marshmallows – Regular size – Mini and giant won’t work
- Black edible pen
Instructions
- Line a cupcake tin with 12 cases.
- Add all the cupcake ingredients to a large bowl and mix thoroughly until smooth.
- Divide the mixture between the 12 cases.
- Cook in a preheated oven on 180C (160C Fan) for 20 to 25 minutes.
- Remove from the oven and place on a cooling rack.
- Leave to cool completely.
- Add the icing ingredients to a bowl and mix thoroughly.
- Take a marshmallow and draw a circle around the top of it. Add two triangles for the eyes, two joining lines for the mouth, a triangle in the centre bottom and a circle or dot either side of that. Then two smaller triangles at either side. This is clearer in the video, but there’s an image below.
- Add icing to the top of the cupcakes, and top each with a mallow head!
- Sit back and have a giggle. Then enjoy the delicious cupcakes while you watch hours of Star Wars!
