Budget Cooking – 3 Ingredient Meatloaf

Don’t like the idea of having to purchase lots of items to make a meatloaf? This one is definitely for you! I use mince, stuffing and bacon – and not only that, I use the cheapest version of all three! This entire thing cost £4.45 and as there are only two of us, it made enough for two meals, making it £1.11 per portion, and they were large portions. For a family of 5 with three kids, you’re looking at 89p per portion – Add in some veggies and that’s dinner sorted!

What You Need

  • Mince £2.49 for 500g
  • Stuffing 75p
  • Bacon £1.21 (8 rashers, smoked)

I bought all items from Morrisons and went for the cheapest version of each item. A quick check of Asda and Tesco produced prices of £4.43 and £4.49 respectively.

Step-By-Step

  1. Tip the stuffing mix into a large mixing bowl.
  2. Add 300ml of boiling water.
  3. Mix until completely combined (no dry mix left).
  4. Add 500g mince (I used beef mince, but any will work).
  5. Mix to combine, breaking up the mince as you work it then set aside.
  6. Using the back of a spoon, stretch out the bacon rashers.
  7. Set two aside, and use the other size to line a loaf tin.
  8. Spoon in the mince/stuffing mix and press firmly to create a compact loaf.
  9. Fold over the bacon hanging over the sides so it’s on top of the loaf.
  10. Now add the remaining two rashers to the top of the loaf to cover it.
  11. If you’re using a silicone loaf “tin”, pop it onto bakign tray so it’s easier to put in and take out of the oven.
  12. Pop in a pre-heated oven at 180C (about 350F) for 55 minutes.
  13. Optionally, 10 minutes from the end of cooking, take the loaf out and brush over your favourite BBQ sauce. This isn’t a requirement, it’s lovely without, we’re just used to having it with it on there. Pop it back in the oven for the remaining 10 minutes.
  14. Take out of the oven and leave to cool slightly before cutting into slices and serving.

I highly recommend homemade macaroni cheese with this! It’s delicious. Note, you can switch the bacon to streaky bacon, we just prefer regular back bacon. We also prefer smoked for this recipe, but unsmoked is also fine.
