Goats Cheese, Pesto & Tomato Focaccia

These are my absolute favourite snack! I first encountered these in a local supermarket, but it’s out the way so we don’t visit often – that and the last time we went I got a parking charge! So kind of boycotting, hence not mentioning their name, but, if you know, you know. Anyway! After we first bought them, I made some of my own and they were even better. The pesto tastes delicious with the cheese and the tomato adds a bit of freshness that cuts through it. I also added olives this time, which I don’t normally do, but the salty brine added another depth of flavour.

The focaccia itself is a simple recipe and they’re super easy to make. They are better eaten on the day you make them, but will last a few days – just give them a quick warm through either in the microwave for a minute or so, or in the oven for 5-10 minutues.

I should have cooked them a little longer too as they’re a little pale. But they were still mighty delicious!

Ingredients

  • 350g Plain Flour
  • ½ Teaspoon Salt
  • 2 Teaspoons Easy Bake Yeast
  • 2 ½ Tablespoons Extra Virgin Olive Oil
  • 50g Cherry Tomatoes
  • 50g Olives
  • Goats Cheese
  • 2 Tablespoons Pesto

Instructions

  1. Sift flour and salt into a large bowl.
  2. Sprinkle on the yeast and mix.
  3. Add 210ml warm water and 1.5 tablespoons of olive oil.
  4. Mix until it all comes together and comes away from the sides of the mixing bowl.
  5. Turn out onto a floured surface and knead for 10 minutes (5 mins if using a mixer).
  6. Once dough feels bouncy and elastic, but not too sticky, pop it back in the bowl and cover.
  7. Leave in a warm place until doubled in size (1.5hrs depending on temp in your kitchen).
  8. Turn out onto work surface again and knock the air out by kneading for 2-3 minutes.
  9. Cut into equal parts and shape. Add to a greased baking tray.
  10. Slice some cherry tomatoes, a few olives and slice the goats cheese into slices.
  11. Mix 2 tbsp of pesto with a tablespoon of olive oil.
  12. Brush the pesto mix on the focaccias then add tomatoes, cheese and olives.
  13. Leave to rise for about half an hour.
  14. Bake at 190C for about 15 minutes.
