Hello! Well, we’ve just eaten this pie and I have to say, for something so very simple, it was absolutely delicious! Served with chips and gravy it was excellent, but I imagine it would be just as nice cold for lunch, or maybe served with chips and baked beans instead. Mmm.
It’s three ingredients – plus a bit of seasoning. I used ready-made pastry, which made this even simpler to make!
Ingredients
- 300g Back Bacon, cut into small pieces (about 1-2cm)
- 4 Eggs
- Shortcrust Pastry*
- Mixed Herbs (optional)
- Salt
- Pepper
*I used two separate sheets of ready rolled pastry, however, I could have used one and just re-rolled what was left for the top of the pie. However, we used the remaining pastry to make some impromptu mince pies so, bonus!
Method
- Take three of your eggs and crack them into a jug or bowl.
- Beat thoroughly.
- Add your chopped bacon and mix.
- Add your seasoning (salt, pepper and mixed herbs) and mix thoroughly.
- Line the base of your greased pie plate with pastry.
- Trim away the excess pastry with a sharp knife.
- Pour your egg and bacon mixture into the centre of the dish.
- Brush the outer perimeter of your pastry with a little water.
- Add your pastry top pressing around the edges. Again cut away the excess.
- Using the side of your thumb, press down slightly and to the left all the way around to crimp the pie closed.
- Using a sharp knife, poke a small hole into the centre of the pie (through the top layer only).
- Brush with beaten egg.
- Bake at 190C for about 40 minutes.
